People who I email frequently sometimes automatically appear when I begin to
type their address. But why do they mysteriously disappearafter if I don't
email them for a few days? Is there a setting for the time period of which
my computer will remember them?

No. Names are removed only after 1000 have been stored (FIFO). What you are
seeing is a common malfunction of Outlook which Microsoft has yet to
acknowledge or solve. You can only fix the problem with third party software
for now.
