Can someone point me to a tutorial or such where I can read enough to get my
head around how to safely set up dynamic disks and maybe some simple raid.
Win2K Pro and XP Pro are the OS's

You should try one of the Windows 2000 or XP news groups that are a
little closer to your topic. Dynamic disks and RAID have nothing to do
with security.
