there are several options in my Word 2007 program that will not show me the
needed drop down menu. For example, I was working with HEADERS under my
INSERT tab. I should be able to open up an additional menu to change my page
numbering. I am not given this option. Some of the drop downs are available
but some are not.
can someone help me??

Most of those dropdowns (Word calls them "galleries") are populated
from a file named Building Blocks.dotx. In the short time Word 2007
has been publicly available, a surprisingly large number of people
have had trouble with that file.

In Windows Explorer, enter this path in the Address box and press
Enter:

%appdata%\Microsoft\Document Building Blocks

In that folder you should see one or more subfolders named with
numbers that identify installed languages, such as 1033 for English
(US). The Building Blocks.dotx file for each language is in the
corresponding folder.

Move the Building Blocks.dotx file to some folder that isn't under the
Document Building Blocks folder. Then restart Word, which will
automatically create a new file (by copying one from the C:\Program
Files\Microsoft Office\Office12\Document Parts folder). Try the
various galleries to see whether the problem is solved. If so, you can
delete the old one from wherever you moved it.
