Activate the Developer toolbar (Word Options > Popular) and you will find
the content controls.

Thank you... I have gotten that far but I still do not seem to have it
working right. Is there a template that has a workind drop-down list you can
share with me?

You must protect the form for the drop down fields to work. Can I suggest
you use the legacy form fields rather than the new 2007 controls?

Fellow MVP Greg Maxey has some information about using such lists on his web
site http://gregmaxey.mvps.org/word_tips.htm
