Click on Format | Paragraph | Indents and Spacing | Line spacing: Double |
OK. Or if you already typed the essay, press Ctrl+A to select all of the
text, then press Ctrl+2 to change the text to double spacing.

Quick way: Select All (Ctrl-A), then Ctrl-2.

As an alternative, select the text you want to double space, and use
Format|Paragraph|Line Spacing to set to double.

Go to Format>Paragraph. That is where you can change the line spacing.

Good luck!
