Documents and dissapearing programs in start menu

How do you get rid of the recent Documents list from my
start menu?

How do you get windows to stop hiding programs/icons in my
start menu that aren't often used?

Right click on the taskbar, go to properties. Customize the Start Menu and remove the check from show Recent Doc's list on Advanced tab. For your other problem, you can switch from Classic Start Menu to XP's or customize the classic and uncheck Use personalize menus.
