DHCP - Change IP address pool?

I need to change the address range assigned in the address pool of a
DHCP scope. Right now it's 192.168.4.15 through 192.168.4.50 and I
simply want to make it 192.168.4.30 to 192.168.4.70. We have a number
of reservations in the scope, so recreating a new one from scratch
isn't attractive, and I can't see a means of changing the pool's
address range in the MMC.

There isn't one. You would need to create the new range, populate it with
reservations, then activate the new range and de-activate the old range, and
possibly reboot all clients if a release and renew from IPCONFIG doesn't
update their addresses.
