Date

If I start to type todays date, Word automatically brings up the date, and
asks me to press enter to accept. If I accept, then tomorrow/or next week..
when I bring up the document, it gives me tomorrows date/or next week's date,
not the date I created the document. How do I prevent this from happening?
 
Use a custom template with a CreateDate field in it. You can change the
fields in your current documents to that by clicking on the date and
pressing Shift-F9. Change Date or Time to CreateDate and press F9 to update
