Hi I am using Office Outook 2007 and are having trouble trying to associate a
new IMAP account to an old POP3 datafile (.pst).. i.e. I want it to combine
both the older folder structure my exisiting datafile / contacts / calendar /
inbox folders with the new folders from the IMAP. I used to be able to edit
account settings and select - datafile that this account uses but I cannot
find the equivalent in the mail control panel app. Any Ideas

You can't use the same PST for both a POP account and an IMAP account. IMAP
accounts will always have their own PSTs. You could certainly open the old
POP PST, however with FIle>Open>Outlook Data File and then drag and drop the
contents of the folders to corresponding IMAP folders.
