I do a lot of work in Excel with adding, multiplying etc of cells. I have
always created a "math function" toolbar which contained "+", "*", "/"',
"(", ")", etc. Thereby eliminating the need to go back and forth between
the mouse and the keyboard. I can't seem to find anything similar in 2007
to add to the Quick Access toolbar or to create an addition to the ribbon.
Any ideas?

You can add these to the QAT. Go to the arrow ate the end of the QAT and
select Customize Quick Access Toolbar. Select 'Commands not in the ribbon'
from the 'Choose commands from' drop-down and then look for the following...
(They're in alphabetical order)

Division Sign
Equal Sign
Left Parenthesis
Minus Sign
Multiplication Sign
Percent Sign
Plus Sign
Right Parenthesis
