That is a very vague question.

Please tell us specifically what you want to accomplish. We would need to
know exactly what data you will store, what reports and queries you will
need to run, etc.

Also, tell us how you currently track this data.

This could be tricky. Race, ethnicity and languages (let alone etc.) are
difficult, "fuzzy" concepts that can't satisfactorily be shoehorned into
a relational database structure. What actual data do you want to store,
and what sort of retrieval or analysis do you want to do?
