Is it possible to find out the creation date of a Word document? Even after
it has been modified?

Yes, you'll find this in File | Properties, and you can insert it in the
document as a CreateDate field; see
http://word.mvps.org/FAQs/TblsFldsFms/DateFields.htm

What I need is to know the date a Word document was created. I don't wish to
date stamp one.

The first answer I gave was the answer to your question. The creation date
can be found on the General tab of File | Properties.

However the dates associated with a Word document can be edited so while
this may provide a guide, it is not foolproof and would not stand up in
court as evidence.
