How do I create a "V" (Latin capital V) with a dot above it? It is used in
Clinical Physiology calculations.

Thank you in advance for your assistance.

You'll find an overdot character that you can put on top of any letter
in the "Combining Diacritical Marks" section of Insert Symbol, at
Unicode no. 0307. To use it once, type 0307 followed by Alt-X; if you
access it via the Insert Symbol panel, you can assign a keyboard
shortcut of your choice to it.

Hi Suzanne,

When you get back, please add the "Combining Diacritical Marks" action
to your Overbar article.

I appreciate your help; however, the person I was doing this for said that
the dot above the V was not large enough ... did not work like it did in Word
2003. Is there any way to increase the font size of the "dot"?

Thanks, again, in advance for your assistance.

In that case, go with Suzanne's Overstrike Field solution, and enlarge
the font of the dot character. You can adjust its vertical positioning
on the second tab of the Format Font panel. (If you just use
Superscript, the font size gets smaller and you're back with the same
problem.)
