is their a formula to count how many times a character appears in on cell

Try this formula:

=SUMPRODUCT(--(MID(A1,ROW(1:100),1)="x"))

where "x" is the character and A1 is the cell you are investigating.
Change the 100 if your data is longer than 100 characters.

of that letter:

=LEN(A1)-LEN(SUBSTITUTE(A1,"a",""))
