How can I override the assumption that "parenthesis r
parenthesis" or "parenthesis c parenthesis" means that I
want the registered trademark or copyright symbol? I need
it to print only as (r) or (c).

To override on an individual occasion, press the UNDO button immediately
after Excel has changed it.
To override permanently, use Tools > Autocorrect to bring up the list of
autocorrections that Excel will apply. Delete the particular entries that
you don't want.
