Converting Mac files to my new and first PC....help!

Can anyone provide some links or information about how best to prepare
for converting my Mac files to my new PC?

I'm already using the following on my Mac:
Microsoft Office2001
Adobe Photoshop
Adobe GoLive
Quicken.

I'm also concerned about transfering my Entourage to Outlook files to
the new PC.

I'm already loading all these file onto CD's. Is this a good place to
start.

My new computer arrives in 2 days

Any help will be greatly appreciated.
