Is there a way to control the source ports used when making both RDP & VNC
connections to other machines?

unfortuantely not, 3389 & 5100 are the DESTINATION ports, i'm after modifying
the source ports of the connection.

VNC "server" configuration can be set to use different IP ports than
the standard 5900 (VNC viewer), 5800 (Java viewer), 5500 (VNC viewer
"listening port" -- reverse connections.)

Check in the VNC "server" settings and set the ports.
