Is there a way to re alphabetize the column headers after hiding other columns

Also, is there a way to re number rows after sorting out a section from a larger spreadsheet - in other words, I need to count the rows.

No, the hidden columns will still keep their column headers

You can't re-number rows but you can count visible rows using a filter
and in 2003 you can count visible cells when there are hidden rows.
The formula you would use is subtotal
