Clean out mailbox

We would like to be able to delete email messages in a particular email
account when it reaches a certain size or delete email messages that are
older then 30 days.

How can we do this?

You want mailbox manager policies....but this is an Exchange thing, not an
Outlook thing. Try posting in m.p.exchange.admin.

That said, it's my opinion that just setting reasonable mailbox quotas &
making users manage their mailboxes themselves is a better idea. As an
admin, I don't care what they save, or where in their mailbox they save it,
as long as they're within their quota - and you need quotas, absolutely. Set
defaults on the message store(s) and make exceptions where needed in each
user's ADUC properties - but don't have any mailboxes without quotas.
