Checkbox color can't be edited

I am working with a document that has checkboxes and for some reason the
checkboxes always appear in red and underlined. I thought this was because I
was using "track changes", but even when that's turned off the checkboxes
remain red. How do I fix that?

That seems to work. However now it appears I have another problem. After
accepting the change and protecting the document sometimes the checkboxes
disappear when I try to check them. Then I have to re-insert it.
