Changing Default Show As to Free

In the 2003 version of Outlook for the New Appointment calendar object, I was
able to change the default Show As status to Free instead of Busy. Now in
the 2007 version, I can't seem to find where to change this at all. I've
looked in Tools > Options as well as Customize.

Any help would be much appreciated.

No, you weren't. That value has always defaulted to "Free" for any event
created in a view that does not use the time scale and to "Busy" for any view
that does use the time scale. All Outlooks are identical in that regard.

You can do this in Outlook 2007 by creating a custom appointment form, and then using that for your appointments. Good instructions are found at http://www.liquidstate.net/2007/12/13/how-to-make-appointments-private-by-default-in-outlook-2007/

Even though the instructions tell how to set an appointment to be "Private" by default by changing the "Sensitivity" value, the field right below it in the list is "Show Time As". There, type in "Free", publish your form, etc. (continue following the directions in the link), and you are good to go!
