Changeing the format of selected text changes all text

My version of word has gone into a strange mode.

When I highlight some text and change the formatting (font, font size etc)
it applies that change to all the text in the document.

If I go "Undo" it removes the new formatting from all but the selected text.

This is very annoying - and I'm sure there must be a simple way to stop it
doing this.

Anyone have any ideas?
