In the Page Setup panel. In Word2003 it's under the File menu; in
Word2007 it's the tiny arrow at the lower right of the Page Setup
group on the Page Layout tab.
Go to the Paper tab and set the size you want in the dropdown at the
top. ("Normal" is called Letter.)
