When I send an email and the person right clicks over my name and goes to
Outlook Properties, how do I edit those blank fields? I cannot find where to
put that information. When I right click over other people's names after I
receive an email in Outlook, I can see their address, phone number, and other
contact information.

That information comes from the contacts stored in your Contacts folder. You can't set what the other person has stored for you.

they are pulling up the information from the contacts stored on their
computer - you (the sender) have no control over it, other than by sending
them a contact with the fields completed.

Well, I don't know if that's correct b/c when I right-click on outlook
properties for my own name in the sent items box I don't see any additional
information and I have all the fields in contacts completed for myself. And
when I right click on someone else's name that I don't have in my contacts at
all, I still get information on them. Their extension and so forth. So I
would like for them to get that information about me when they right-click
and go to outlook properties b/c I provided it.
