Change Column Heading Names

Is there a way to chage the column heading names in Excel
from A,B,C, etc. to another name such as LastName,
FirstName, etc.?

You can't do what you want, but you can fool it.

Type the headings in row 1.

Hide the rows and coilumn headers (Tools>Options View tab and uncheck the
Rows and Cilium headers checkbox.

You could also change the colour of row 1.
 
If you wish to keep these headings that Bob suggests in view no matter how far
down you scroll , select A2 then Window>Freeze Panes.
