Other than the Subject header (by using Edit -> Edit Message menu), you
don't get to edit the headers. They weren't your headers, anyway. Those
were added by the sender and the mail servers between them and you. So why
do you want to falsify an e-mail's headers? Why are you trying to lie about
where, when, or how the e-mail was delivered from or to?

Are you speaking of the data that appears at the tops and bottoms of the page
image?
