I have Windows XP
Unfortunately, whenever I open any programs on my pc, the background color of
the page, whether it be Word or Excel, etc. is a gray color. For instance, in
Excel, I cannot even shade a cell, sheet, etc. a different color. First off,
the background color should be white. I cannot seem to change this. Any
suggestions?

You might want to post to an Office newsgroup or one for the particular
program. Here is a list of MS public newsgroups:
http://www.aumha.org/nntp.htm

Control Panel -> Display Properties -> 'Appearance' tab -> 'Advanced' button -> Item: 'Window'

Change 'Color1' to white.
