Can Page No. references embedded within a doc be auto updated?

I am writing a book and have embedded a few page numbers (for cross reference
within the book) both in the main text and in footnotes. Is there some way
in which these Page No's can automatically update when they change due to
changes in the scope and structure of the book?
 
If they were actually cross references (REF fields), they will update. If
they were entered from the keyboard, then No, they will not update, but I
would suggest that you now change them to REF fields so that if there are
any future changes, you will not have to manually update them a second time.

If they are inserted as REF fields (Insert | Reference | Cross-reference),
yes. They won't update fully automatically, but whenever fields are updated
(such as when you print the document), they will update (or you can update
them manually with F9).

This has been helpfull and allowed me to cross reference footnotes. However,
as I have my Page No's in the Header I was still unable to cross reference to
Page No's.

You could need to be cross referencing to something on the page, or more
correctly, the page number of one of the items that appear in the list of
Reference types in the Cross Reference dialog..

You can Insert a Bookmark at the spot you want to reference, and then
Insert a Cross-Reference to the Bookmark. Then, as you repaginate, the
Bookmark moves to a different page but the cross reference still
updates with F9.
 
A PAGEREF field returns the page number of a given bookmark. Some items are
bookmarked automatically by Word and are listed in the Cross-reference
dialog; these include footnotes, endnotes, numbered items, headings, and
various kinds of captions. To cross-reference the page number of any of
these, you just select "Page number" in the "Insert reference to" box. If
you need to cross-reference something that is not listed, you'll need to
insert a bookmark marking the point or text you want to cross-reference
(Insert | Bookmark).
