How do I change my Outlook Calendar settings to include contact birthdates
and anniversaries.

To get birthdays and anniversaries to show in the calendar, you must first
input that information in the Contact's details. After that, the
birthday/anniversary will display automatically.

Thank you for your response, Milly. I should have explained my problem
better. All data has been entered into contact details..... And at one time,
dates were displayed automatically to my calendar. I've mucked it up somehow
and no data (no holidays, birthdays, etc) are now being shown in my calendar.
Appointments ARE displayed, however. Any further advise would be greatly
appreciated. Thank you.

Did you at one time import a .pst file? If yes, then this may be the cause.
To rectify the situation (may be long process depending on the number of
contacts with birthdays/anniversaries) you will need to edit the details of
the contact's birthday, such as changing the day and then back again.

As for the problem with your other items on the calendar, are you using a
filtered view? View->Current View. Since you did not provide your version of
Outlook, you will need to proceed from this basic start to find where you
can customize your current view and change the filtering.
