Bypass Startup key

No, there isn't. You can, however, turn off the startup key by creating a
property in the database AllowBypassKey, and setting it to False. See
http://www.mvps.org/access/general/gen0040.htm at "The Access Web" for the
proper way of doing this (the example in the help file isn't as good as it
could be)

Is there any way to change the Bypass Startup key from the
default SHIFT key?
