Boot from non-RAID, RAID 1 as data store

I'm hoping someone can assist.

PIII/1ghz, basic old mobo, SiI680r basic RAID card. 80GB + 2x200gb drives

The configuration I want to install on my machine is use the 80gb for
boot off of one mobo IDE channel and the 2x200 in a RAID 1 config for my
data off of the RAID card.

The SiI680r card is a pain in the butt (i.e. hangs on "verifying DMI
pool data" when I boot as above and with 2x200 drives connected) but
could I implement the config above with an Adaptec 1200A or other simple
RAID 1 card?

Anyone know with 95% certainty?

In principle it should work. Depending on your OS, you could also do this
in software, with practically no speed penalty.
