Bookmark or field?

I want to define variables so that I can change the value once and it
updates throughout the entire document. I have managed to do this with
bookmarks, but then I still need to first define the bookmark using text
within the document. I would like to define the value somewhere else in
word, and then insert bookmarks / field in the document. Is there a way
that this can be done, or do I have to type the value at least once within
the document?

You can use Word's built-in document properties or define custom ones.
DocProperty fields in the document, when updated, will reflect the current
content of the given document property.
