Blank Drop down lists in forms

Does anyone know how I display drop down fields as blank when opening a form?
I want to prompt the person filling in to select something rather than
leaving the default entry as it is.

You can type one or more space characters and add that to the list of items.
Position it at the top of the list and it will be the "default" they see. You
could also add a prompt like:

-- Select a state --
