Best Resoultion for page display

Some sites use 100% page width so the page fills the whole screen no matter
what the resolution. However alot of sites use 800 pixel width so the page is
either in the middle of the screen or to the left when viewing in 1024x768 or
higher.
Why is this and what is best?

There is no best. However, at 800 pixels, some folks that
use a monitor with a resolution of 800 by 600 will many
times be squeezing the page unless maximized. If 100% is
used the design must be flexible.
I have designed all 15 of my sites using 100%.
 
Use 100% if you want the page layout to adjust to the browser window
Use 750 pixels if you want the page layout stay the same for all viewers

750px fixed width tables would probably be easier for a newbie.

Collapsing tables gets a little tricky when layout images and such so the collapse gracefully...and you need to do a little addition/subtraction (math..yuck).

Just depends on what you want to do...both work well.
