Beginng formulas w/ operators

When I enter a formula it has to begin w/ an operator like
= or +. It's an extra keystroke, is there any way around
that?

you have to enter an operator. Use the equation sign for this.
Otherwise how should Excel recognize you want to enter a formula and
not a text
 
I thought I remember a setting or format I had changed one
time so that when entering 2+2 for example I didn't need
an = or + sign first...maybe I'm mistaken.

Short answer: No
Excel needs to know you want to do math - Lotus is better at guessing!
Add a button to toolbar to insert =
 
You most likely had the following option turned on:

<Tools> <Transition>, and had a check on "Transition Formula Entry"

Typing just "2+2" converts this to "=2+2"
