Is there a simple way to Back up Everything in Outlook all at once. I want
to use this for business and can not lose such things as Journal entries,
phone conversation notes or phone numbers. Would like to be able to back up
every day, but needs to be simple.

The most straightforward way to do it is to simply make a copy of your
..PST file (The Outlook master file, containing all your email,
contacts, calendar, notes & tasks).

It's typically located in:
C:\Documents and Settings\<YOU>\Local Settings\Application
Data\Microsoft\Outlook\outlook.pst

Just copy and paste it.
