When forwarding emails, when I add text or make corrections, a space is added
before the new text. I am using outlook without word as the email editor as I
need to add signitures.

It may be how the signature is setup. Try doing the following

On the Tools menu, click Options.
Click the Mail Format tab.
Click Signatures.
In the Signature box, select the signature that you want to modify, and then click Edit.
Place the insertion point after the last character in the line.
Press DELETE, and then press SHIFT+ENTER.
Repeat Steps 5 and 6 for each line of text.
When you have finished with all lines, click OK three times.

The problem is not in the signatures. It is in the text I am forwarding. For
example I forward a quote I have saved and change the amounts and qty to suit
the customer. When I change the price, it automatically double spaces. The
same if I add or change text
