a bacon and egg butty


you will need;

4 rashers of good bacon
1 duck egg, free range
Cornish Sea Salt
Heinz tomato ketchup
Daddies brown sauce
two slices of good bread, brown is healthier
real butter for the bread
some good frying oil, rapeseed or olive oil for frying


method:

add oil to frying pan and heat to a moderate temp
trim the fat off the bacon and add to the frying pan, watch out for spitting
add the bacon
in the meantime butter the bread
remove the bacon & nice crispy bits and place on the bread so the juices have time to soak into the bread
fry the egg in the pan, break yoke or flip over-easy, or just leave it to run down the chin later
pour brown sauce over bacon
add the egg & sprinkle with sea salt
pour 'tom soya' over egg
complete the 'witch by adding the other bit of bread
cut into manageable portions

consume with glee

a napkin may be essential

Mmmmmm, now I'm hungry! I don't think I've had duck eggs in a Bacon butty - sounds tasty.

What I quite often do is fry up loads of chopped onions in with the Bacon, until they're nice and caramelised then add those in to the sarnie. :D
