I am unable to get any options when I right click on programs accessed from
the "Start" "All Programs" menu.
Therefore I can't delete any and I can't send any of them to my desktop from
there. My program menu is getting very large. Does anyone know what is
wrong?

Right click the Start button and select Properties, Customize. Check the box for Enable dragging and dropping.
