When I go to enter a name to send an email, the list pops up of previous
people I have sent emails to. How do I maintain this list? Add people,
change email addresses?

You can't maintain the list. New people are added as you send to them, to
change a name, when it comes up just highlight it and hit delete, then enter
the new address and it will pop up.

You add people by sending them mail. You delete people by using your arrow
keys to highlight the entry and the press Delete. Alternatively you can use
either http://www.nk2.info/ or http://www.ingressor.com/desktop.htm
