My address book has started showing me fax numbers instead of email
addresses. Heading says email address, but info is business fax.

Not possible. Address Book shows all electronic addresses, which includes
both fax and email. Provide evidence that you are the sole exception to this
behavior.

I'm not sure why you think I'm making this up. When I press new email and then press 'to', it comes up with business faxes instead of emails.

Perhaps you didn't see that Russ said the Address Book view will include
email and fax addresses, since Outlook considers either to be a legitimate
electronic address.

The address book view shows ALL valid electronic addresses in your Contacts
Folder, which includes email, fax, pagers, etc. So the only explanation for
what you're seeing is that the Contacts in the folder you are displaying
have only fax numbers as valid electronic addresses. It cannot be otherwise.
