add contact info to Word Template

Maybe I don't understand what it is you're trying to do. You can access your
address book from within Word if you want to insert a fax number, I
believe -
 
Ideally, from the vCard in outlook, I'd like to add that contacts name,
position, company and fax number to my fax template without having to copy
and paste.

Outlook has contacts, not vCards (a vCard is something you can export
to/save as, to send to someone else, so they can open it & add a contact).
You can open the address book in Word provided your version of Outlook & of
Word is the same.... look in Word help. However, it isn't a Word template -
it's something you'd do in a new document.
