Access 2007 specific form design question

I'm having no end of trouble figuring out how to design forms in
Access 2007.

There is a new "FORM" button on the ribbon bar. It creates a default
form from the table/query that is selected in the navigation pane. But
it seems that once this ofrm is saved, it is not possible to
subsequently change the layout of the form. The Remove (layout) button
in Arrange ribbon is grayed out.

Even if I use the Remove button during the form creation process, I'm
still getting weird results. It seems to have some form of Stacked
attribute to the controls. I really, really don't want all the
controls to be the same size.

Also, it automatically includes a subform in the report. While this is
great, I'd like to be able to edit the layout (and specifically the
titles of the controls displayed in the subform, but I can't seem to
find any way to do that.

If I try and design my own subform, it doesn't use the Datasheet
layout, it uses a similar stacked layout (even though it, by default
had used the datasheet layout).

This is so aggravating. Something that should usually take me 30
minutes has now consumed hours over the last few days.

And the help truly sucks. There are many references to the "see also"
section, but then there is no mention of that topic in the See Also.

Every time I want to like Access 2007, it just kicks me in the gut.
