XP and Vista Shaing

Nice tutorial, but left me a bit puzzled about actually using this for real.
For instance, say I've downloaded eg a codec to a subfolder within the
'downloads' folder in my personal folders. Now I want to install that codec
on another machine. If I share that folder, I get about 10 mins disk activity
followed by the entire 'users' folder tree being shared, including the
default user.
If I then unshare the folder with the codec in, the 'users' folder is still
shared. If I right click it and select sharing, I get a 'Properties' dialog
rather than the normal 'sharing' one, and I have to go through 'Advanced' to
get to an unshare option.

What gives?

You can share sub-folders without the parent being shared so they is
puzzling.

More experimentation reveals that if I just ignore the 'Sharing' window and
work through the advanced sharing from the 'Properties' window, it all works
as it should. However, going this way means that I have to configure both
Share permissions and File Permissions, whereas using the Vista 'sharing'
window (on a folder outside the 'users' tree) silently adds 'Everyone' to the
File Permissions automatically. In other words, makes it work more like XP.
