How do I know which is my version?

I have in my computer windows xp pro version 2002

Either right-click on the My Computer icon on your desktop and then
left-click on Properties or start the System applet in Control Panel.
On the General tab you will see your operating system. Under the name
of the operating system you will see what Service Pack is installed. If
nothing is there, then you have no Service Pack and you should get SP2
(only after properly preparing your computer).

That should be a wise option, but why I want to do is download all those
updates and burn it into a cd because I have computers connected to a very
slow internet connection, so with this cd I'll intend to update those
computers without using the internet.

Use Custom Install and you can select what you want. Note there is also
an option to view installation history.
