When accepting a meeting, should be able to set reminder.

Currently when a meeting notice is mailed out, the sender's reminder is
defaulted for the recipient. Is there anyway for the recipient to modify the
reminder as they accept the request instead of accepting it and then going to
the calendar and opening it to change the reminder? Or for the recipient's
default reminder to be saved automatically?

Sure. Open it and change it before accepting it. Click the Calendar button
on the invitation, open the item, which will be highlighted and show as
tentative, make the changes you want, close it with the "X", then go back to
the invitation and accept it. I do that all the time.
