Same as what archiving means in real life; moving out and deleting items
that are no longer actively used to a different place/archive. For Outlook
this means that old items (you can determine what you consider "old") are
moved out of the default message store into a separate pst-file.
In addition to Roday's info. Not everybody *needs* archiving. You may
keep all your lifetime emails in a single PST file. You may need
archiving if you have a limited IMAP or Exchange Server mailbox. In this
case, archiving moves old messages to an archive.PST file.
