If I upgrade from XP Professional to Vista Business and decide later that I
want Vista Ultimate, would there be any problems upgrading from Vista
Business to Vista Ultimate. Also XP Professional has Windows Media Center.
Can Vista Business also have Windows Media Center? Or could I keep Windows
MC from XP Professional?

You can upgrade using the same disk. The Vista dvd has all versions on them.
You would upgrade by going online and paying the difference by credit card
and receiving the unlock key for Ultimate. Vista Business does not have Media
Center. Only Home Premium and Ultimate have MCE. Ultimate has every feature
of all other versions. You cannot keep XP PRO if you upgrade unless you set
up a dual boot. Visit the MS Vista Site for more info.

No. You can even do it online using Windows Anytime Upgrade.
Also XP Professional has Windows Media Center.
Can Vista Business also have Windows Media Center?

No problem - you will be able to do an online upgrade for a charge.
Also XP Professional has Windows Media Center.

No it does not - Windows XP Media Center Edition has Media Center.
Can Vista Business also have Windows Media Center?

No - Media Center functionality is shipped as part of Home Premium or
Ultimate Editions
Or could I keep Windows
MC from XP Professional?

No if you upgrade to a version that does not contain the Media Center
bits as covered above you loose this functionality.

One clarification on keeping XP Pro. If the OP uses an upgrade edition to
upgrade to Vista then the XP license is subsumed into the Vista license.
They cannot then dual boot with XP. To do so the OP needs a full version of
Vista.

Visit the MS Vista Site for more info.

Why can't he do it using Anytime Upgrade? You have misread something. The
following upgrades may be obtained using Anytime Upgrade:

Home Basic to Home Premium
Home Basic to Ultimate
Home Premium to Ultimate
Business to Ultimate.

The last one is exactly what the OP asked about doing and you said he can't.
