Uninstall Outlook 2003 and return to Office 2000

I installed Outlook 2003 upgrade and then Word 2003 upgrade after having
Office 2000 Small Business (Outlook, Word, Excel, Publisher) for years.
There are so many problems that I would like to uninstall the 2003 versions
and return to the old Office 2000.

How do I do that without losing any contacts, messages, folders, etc?
