Turn off default e-mail option in Outlook

I have 3 e-mail addresses that I use. It would be helpful that when
sending an e-mail, Outlook would querie me on which one to use for this
e-mail rather than choosing the default e-mail. I don't always remember to
change to one of the non-default e-mails when appropriate.

Aside from your finger that chooses the account nothing that I know of.

you can save templates with the sending account selected, but you'd need to
remember to select the right template when composing new mail (replies go
out on the account that they were collected on).
